English Toffee

This is one of my mom’s recipes and she made it every Christmas and kept it in little Christmas tins. It is melt in your mouth delicious!! One year I thought I would just whip up a few batches for the Digger’s (I am trying that name out for Ricky) guys that he worked with. I waited until the night before he was going to give it out and guess what?!?! Batch after batch didn’t turn out!! I was determined I was going to master this and tried many, many times!! No telling how much money I spent trying. I later was visiting with my mom and aunt and I finally admitted that I couldn’t make their famous toffee. I commented that I hated to waste all that butter, which is what the recipe said, and they looked at me like I was crazy and started giggling. I was supposed to use MARGARINE!! Who knew! From then on I was one toffee making fool!

Who knew these two could be so sneaky!

Daddy will be joining us this year for our first Christmas/New Years without my mom and I hope this makes him feel loved.

English Toffee

Spread 2 cups chopped pecans on foil

Combine 1 cup sugar
2 sticks oleomargarine
1 T Karo light syrup
3 T cold water

Stir and cook to a hard crack stage-290 degrees on candy thermometer.

Pour over pecans and immediately lay on top 3 Hershey bars. Spread Hershey bars over toffee as they melt. Leave overnight and break into pieces.

I mentioned before that we are a week behind the rest of the world in celebrating Christmas so this week I am making all of my Christmas goodies! I forgot how fun it was!! I am not a big fan of fudge but after looking at some recipes I decided that I needed to add it to my Christmas food list. The recipe that looked irrisistable was Edie’s Grannie’s recipe from Life in Grace blog. I am dying!!!!! It is absolutely delicious!! I have already given the neighbors some! I feel so grandmothery!

Grannie’s Fudge

2 sticks butter
6 cups of sugar
1 can evaporated milk
1 (7oz.) jar marshmallow cream
18 oz. chocolate chips (2 1/2 cups)
2 tsp. vanilla

Bring butter, sugar and milk to a boil and boil for six minutes.  Remove from heat and stir in marshmallow cream, chocolate chips and vanilla.  Keep stirring until the mixture doesn’t run quickly off the spoon. (It requires a lot of stirring!) It should “collapse” off the spoon.  Then spread it in a buttered jelly roll pan.  After about 30 minutes, cut into squares.

Cookie Decorating Party

Though not one of my favorite things to do, I made sugar cookies yesterday for our big cookie decorating party tonight with the family. Once you get going it is really not that hard. The key is to get the cookies rolled out evenly. You will notice in the picture there are some pretty brown ones, guess I didn’t get that “rolled out evenly” down. I’ll show you pictures of the finished product, which ought to be good with 2,3,7 and 9 year olds decorating the cookies. Hopefully there will some left when it is over!

Sugar Cookies

2 cups butter, softened
1 1/3 cups sugar
2 tablespoons pure vanilla extract
2 eggs lightly beaten
5 cups all-purpose flour

Beat butter and sugar in a large bowl with electric mixer until light and fluffy; blend in vanilla extract . Add egg; beat for one minute. Stir in flour gradually. Cover; refrigerate for 2 hours or until dough is firm. Roll dough 1/4 inch thick. Place on ungreased baking sheet. Bake 6 to 8 minutes.

Icing

1 cup powdered sugar
1/2 teaspoon vanilla
about 1 tablespoon water or 1 to 2 tablespoons half-and-half

Beat until smooth and of spreading consistency. Tint with food color if desired.
Enough for 3 to 5 dozen cookies.
