I try to watch how many carbs I consume and whenever I have overindulged and fell “puffy” I pull back and reassess what I am eating. I have some good ole standbys that get me back on track. This is one of them! We order it at one of our favorite places to eat and I have recreated it and I have to admit, it is yummy! They serve it with pita triangles but we eat it just like it is. I have no idea why they call it Naked Avocado Salad because it obviously is avocado with stuff added to it. Maybe because it sounds fancy.
Naked Avocado Salad
4 ripe avocados
1/2 cup chopped red onion
3 roma tomatoes, chopped
juice of 1 lemon, or less depending on how much you like lemon
salt and pepper to taste
1/2 half pound bacon, fried and crumbled
1/4 cup feta cheese, crumbled
Lightly mash avocados. Fold in tomatoes and red onion. Sprinkle on lemon juice, salt and pepper, and mix lightly. Sprinkle crumbled bacon and feta on top.
