Though not one of my favorite things to do, I made sugar cookies yesterday for our big cookie decorating party tonight with the family. Once you get going it is really not that hard. The key is to get the cookies rolled out evenly. You will notice in the picture there are some pretty brown ones, guess I didn’t get that “rolled out evenly” down. I’ll show you pictures of the finished product, which ought to be good with 2,3,7 and 9 year olds decorating the cookies. Hopefully there will some left when it is over!
2 cups butter, softened
1 1/3 cups sugar
2 tablespoons pure vanilla extract
2 eggs lightly beaten
5 cups all-purpose flour
Beat butter and sugar in a large bowl with electric mixer until light and fluffy; blend in vanilla extract . Add egg; beat for one minute. Stir in flour gradually. Cover; refrigerate for 2 hours or until dough is firm. Roll dough 1/4 inch thick. Place on ungreased baking sheet. Bake 6 to 8 minutes.
Icing
1 cup powdered sugar
1/2 teaspoon vanilla
about 1 tablespoon water or 1 to 2 tablespoons half-and-half
Beat until smooth and of spreading consistency. Tint with food color if desired.
Enough for 3 to 5 dozen cookies.
